Cedar Planked Haddock


Grilling haddock fillets on cedar planks enhances the fish’s sweet, mild flavor and imbues it with a wonderful aroma. Plus, it’s an easy way to cook the delicate fish on the grill, which might fall apart without the support of the wood. The plank doubles as a lovely serving platter after the fish is cooked to flaky perfection.

  • 4 Serves

Ingredients:

  • 2 tbsp olive oil
  • 1 each lemon, juiced and zested (keep separate)
  • 1½ haddock fillets, cut into four 6 oz portions
  • ¼ cup cilantro, chopped
  • 1 each, garlic clove, minced
  • Kosher salt to taste
  • Ground black pepper to taste
  • 2½ tbsp non-pareil capers, drained
  • Equipment: one cedar plank, soaked in water for at least two hours.

Directions:

  1. Pre-heat grill to medium-high heat; or oven to 350˚F.
  2. Combine olive oil and lemon juice, then lightly coat haddock in olive oil/lemon juice mixture. Sprinkle with garlic and season with salt and pepper.
  3. Place fish on pre-soaked cedar plank and grill, keeping lid closed, for approximately 12−15 minutes over medium-high heat (use a spray bottle with water for flare ups if needed), or roast in 350˚F oven for 8−10 minutes or until fully cooked.
  4. Remove from grill or oven and garnish with capers and lemon zest.
