Champagne Biscuits Roses De Reims

Some foods are so particular to a region that they become culinary symbols, representing a place and its way of life. These gemlike, twice-baked French cookies have been made from the same recipe in the town of Reims, the capital of the Champagne region, since 1691. Maison Fossier has been the premier baker of these iconic, gorgeous biscuits since they opened in 1756, during the reign of Louis XV.

Flavored with crushed vanilla pods and tinted a romantic shade of pink, they're traditionally dipped in champagne (and sometimes red wine, tea, coffee, or milk). The cookies are crafted to compliment champagnes gorgeous flavors, and to keep intact after a good dunk.
