Herring Smørrebrød with Apples and Beets


If you've turned up your nose at herring fillets, try this terrific sandwich in which the herring combines beautifully with other ingredients. Makes 12 smorrebrod

Ingredients:

  • 4 thin pickled herring Wllets (about 3/4 pound total)
  • 1 small potato, peeled, boiled, and cut in small dice
  • 3 large slices pickled beets, cut in small dice
  • 3 tablespoons chopped onion
  • 2 tablespoons chopped dill pickle
  • 1 small apple, peeled and cored
  • 2 tablespoons mayonnaise
  • 1/2 stick (1/4 cup) butter
  • 6 slices of dark bread
  • 12 green-leaf lettuce leaves
  • freshly ground pepper to taste
  • dill leaves for garnish

Directions:

  1. Cut the herring fillets into pieces roughly 1/2 inch by 1/2 inch. Place in a bowl, and mix with potato, beets, onion, and pickle. Chop the apple into small dice and add to the bowl. Add the mayonnaise and mix well.
  2. Spread 1 teaspoon of butter on each of the bread halves. Top each half with a lettuce leaf that overlaps slightly on all sides. Divide the herring mixture among the bread halves, and sprinkle with freshly ground pepper. Garnish with dill leaves.
