These tasty tidbit are wonderfully flavorful, but are a little tricky to defrost. I had a bunch that stuck together when I tried to defrost in the microwave, per directions. Hot water defrost works better.

If you're ordering caviar, get these blini. They're pre-made and an excellent accompaniment for the caviar (and creme fraiche). They also last several days, refrigerated if you repackage them in waxed paper and aluminum foil.

I didn't have time to make my own Russian blini and these made for a perfect appetizer matched with quail eggs, caviar, creme freche and dill. The warmed blini need a gentle touch but they hold up well to handling.

I used them with some of the osetra caviar. Even though they were quite plain tasting, I am not sure that they didn't interfere with the caviar flavor a little bit. Still, very nice quality and easy to deal with.
