    Early in its age, it is creamy rich and interesting, actually intriguing. Definitely a young star. As it ages, the edges mature into a symphony of lovely, but mysterious flavors. Really hard to believe this cheese was born on the Northern California coast, but so proud and glad it did! (They also make another terrific cheese: "Purple Haze.")
